1 tbsp vegetable oil
5cm piece ginger
2 teaspoons curry powder
1/4 to 1/2 teaspoon dried chilli powder
1/2 teaspoon ground turmeric
2 tomatoes, deseeded
1/2 cinnamon stick
2 bay leaves
400ml can coconut cream
2 cups chicken stock OR
water and 1 tbsp vegetable stock
1.5kg large green prawns, peeled, deveined, tails intact
Small handful chopped coriander or to taste
Chop ginger 5 secs on speed 7. Scrape down.
Add oil, cook 2˝ minutes 100C on speed 1.
Add curry powder, chilli powder and turmeric. Cook 1 minute at 100C on speed 1.
Add tomatoes, chop 10 seconds speed 4˝.
Add cinnamon and bay leaves.
Start cooking at 100C for 16 minutes at Reverse speed 1, slowly add coconut cream through the top, then add stock or water and stock. Leave MC out.
Add prawns and coriander. Cook for 3 minutes or until prawns just turn pink at 100C on reverse speed 1.
Discard cinnamon and bay leaves.
Serve with Thermomix rice.
